What New Year’s resolutions or challenges have you set up for yourself this year? Perhaps you’re starting your fitness journey, learning to bake (or challenging yourself), or becoming a vegan. I’ve got the perfect selection of recipes to help you out with any of your challenges, even if they don’t get much past January!
Vegan Treats

Veganuary might just be the start of your new plant based journey, so start with a recipe from the prettiest looking vegan website The Little Blog of Vegan. These lemon tarts will push the grey skies out of the way and make you long for spring.

If you want to celebrate completing your first month as a vegan (or honestly at any time) then whip up the cutest carrot cake covered in tiny baby carrot decorations. It looks so good.
Healthy Snacks

Rice balls are perfect any time of the day and can be filled with anything, so you can make them as healthy as you like. These ones are shaped like pandas, so you can’t NOT make them!

These Pugsheen raw tarts from Luxe and the Lady are super cute, but also intentionally quite low in sugar. Get your nutty chocolate fix, but in a healthier way.
Simple Bakes

When you’re starting out on your baking journey you probably want to start with recipes that have minimal ingredients, minimal steps and/or minimal equipment. These flower topped shortbread cookies look so elegant, while still being easy to make.

Cupcakes are great because they usually involve one bowl for the cake mix and one for the icing and with these funfetti cupcakes from Chelsweets, you can just cover up any errors with sprinkles. Plus they look so fun!
Challenging Bakes
If you’ve pledged to challenge your baking skills this year, then can I please ask you to try these lion dance steamed buns from BEMBUM KITCHEN, because they look incredible. Plus, Lunar New Year is almost upon us and these are perfect for the celebration.
A true decorating challenge for winter has to come in the form of this snowball cake from Cupcake Jemma. If you can get your hands on the spherical moulds they recommend, then this would be amazing to put together.
What’s your challenge for this year?
