Summer is here and I’ve already eaten more than my fair share of ice cream, as it’s probably one of my favourite treats. However, there are a lot of desserts out there that look like ice creams, but are actually made of cake! I’ve rounded up recipes for a few of the best looking ones for when you don’t want your ice cream to ever melt.
These cakes in a cone are a classic and I love these from Sugar Spun Run that look like a mixed flavour soft serve topped with brightly coloured sprinkles. If you’re looking for a vegan version then check out these ones from Baked by Clo.
Did you used to eat Neapolitan ice cream when you were a child? If it was ever offered, I’d try to scrape out the chocolate side as much as possible, which I guess defeats the purpose of the tricolour treat. The chocolate, strawberry and vanilla flavours are all represented in these beautiful cupcakes by Cupcake Jemma and you definitely won’t be picking flavour favourites here.
Cup or cone? These ice cream cups from Bakerella are a great alternative to the ice cream cones and they look super realistic.

If you’d rather swap out the ice cream middles for chocolate spread, then Becky Excell has these great versions that are gluten-free and can be adapted to be dairy-free, vegan and low FODMAP too. Her allergy friendly recipes are always top notch.
I’ve found a fantastic summer birthday or celebration cake for the summer months and I think you should definitely give it a try. This mega ice cream drip cake by BakeUp is two tiers and would be more of a challenge than the cupcakes, but it looks like it would be so much fun to decorate.
