While summer might be coming to a close, I’m still holding onto all of the summer flavours. Watermelon is one of my favourites, so here are a few recipes that celebrate the fruit in all its glory.
Ice lollies are all I crave over the summer and these from My Kitchen mix watermelon with lemon and ginger for a super refreshing and flavourful bite. They also come with edible flowers inside, making them perfect for any kind of outdoor gathering.
You’d be surprised to know that these beautifully decorated cupcakes are actually watermelon flavoured too. Along with the flavouring, Sprinkle Bakes uses neon gel colours to achieve the vibrant hues and black sesame seeds as decoration for the watermelon’s real ones. Very creative.
If you want to use the real fruit in your cake, why not make the whole cake out of actual watermelon? Domestically Blissful creates this stunning layer cake by carving blocks of watermelon to stand in for cake tiers and then attaches different fruits to cascade down the side like a flower display. This is one way to level up a fruit salad!
With watermelon being the most refreshing of fruits, they also make some of the best summer juices. How Sweet Eats has a couple of super tasty looking ones to try – Watermelon Ginger Sparklers with ginger and soda and the other with lime in the form of an Agua Fresca. Perfect for a hot day.
Pies & Tacos has created quite possibly some of the cutest macarons I’ve seen as they look just like a slice of watermelon. Both the chocolate ganache and buttercream fillings come flavoured with watermelon, so much like the cupcakes above, you’re getting both the looks and flavour of watermelon.
However, if you just want the looks of watermelon without the flavour itself, then these watermelon cookies from Oh My Sugar High would be perfect. They use a ready made cookie dough, but you could easily substitute for your favourite recipe, especially if you’re on a specific diet, and then use the recipe for icing inspiration.
