It’s Veganuary and I have got a roundup of some absolutely delicious sounding cheesecake recipes of all varieties. Let’s dig in!

The Little Blog of Vegan always has such a range of pretty, fun and cute looking desserts and these individual Twix cheesecakes look fabulous. While Twix isn’t vegan, this version takes the elements and makes it so you can enjoy the flavours of a Twix without the worry.

Lotus Biscoff biscuits and the spread are already vegan, so The Veg Space puts a spotlight on them with these little Biscoff cheesecakes. The biscuits are used in the base and topping and the spread is used in the cheesecake itself and topping, so you definitely can’t complain that the Biscoff is subtle.

If you wanted to do a big cheesecake rather than smaller ones, then this classic vanilla cheesecake from Jane’s Patisserie could be a great option. It’s topped with strawberries and reminds me of a cheesecake version of a Japanese Christmas cake, so very seasonal for this time of year.

This quick and easy twist on a cheesecake from Minimalist Baker can apparently be achieved in about 5 minutes, so if you’re desperate for a cheesecake but don’t want to wait for one, then these cheesecake style cups could be the option for you. Chocolate and raspberry is always a fabulous combination as well, so it’s definitely worth a try.

This maple-walnut baklava cheesecake from Gretchen’s Vegan Bakery is a bit of a showstopper. Baklava itself is super delicious so adding it to a cheesecake would really take it to the next level. Filo pastry is naturally vegan (but check the ingredients of store bought packs just in case) making this a great option, and I love that the cheesecake crust in this recipe is actually made out of walnuts instead of biscuit.

The striped ombre effect on these little chocolate hazelnut cheesecakes from Pies and Taco make them really stand out and I adore the combination of chocolate and hazelnut. The cheesecake batter is separated at different intervals of creation to make the different shades of brown, but you can just mix everything together if you just wanted the flavour without the design.

Vegan Dollhouse has an interesting take on a cheesecake by topping brownie batter with a cheesecake mixture and baking them both together. This way you get two desserts in one!
