It’s summertime here in the UK and that means summer berries galore!! I’ve rounded up some of the tastiest looking berry recipes I could find to make a ‘jam’ packed post to share with you. Don’t forget that back in January, I also made an entire post dedicated to strawberry recipes for Strawberry Day that would work perfectly now too.

One of the most classic British summer recipes is an Eton Mess which comes packed with fresh strawberries, meringue and freshly whipped cream. This recipe also gives you the option to change the fruit or make it dairy free or vegan.

Blueberries are another delicious summer fruit and I love how they’re incorporated into the decoration of this gorgeous layer cake, as well as into the cake itself, the icing and jam.

Fruit and cream is a fantastic combination, but in this swiss roll cake from Life, Love and Sugar, the cream is made richer with the addition of mascarpone.

Blackberries don’t normally arrive until a little later in the summer here, but luckily this macarons recipe from Oregon Berries uses blackberry jam and can utilise frozen blackberries too if necessary. I also love the addition of green to one side for a pop of colour and the star anise to the blackberry to make things a little more interesting.

Peggy Porschen’s cupcakes are pretty famous in the UK and this is a recipe for their summer berry cupcakes made with three types of berry. The icing is a deep pink because of this and they’re decorated with the same fresh berries too.

If you wanted to scale this up, then Jane’s Patisserie has a very similar looking recipe as a layer cake instead.

This strawberry tiramisu cake, with homemade lady fingers, from The Little Blog of Vegan, looks beautifully elegant and perfect for a summer garden party.
Ally Bakes uses berry puree to create a pastry cream and in turn a stunning looking summer berry tart. This would look beautiful in any bakery window, or on your summer table. There’s a full recipe, plus a video with even more detail, which’ll make this complicated looking dessert much easier.
